Potato Gratin




Ingredients:

Yellow potatoes
Carrots
Portabella mushrooms
Yellow zucchini
Onion
Scallion
Turkey bacon
Mozzarella
Eggs
Cream
Salt, black pepper

 
Chop up potatoes, carrots, mushrooms, zucchini, onion, scallions and turkey bacon. Mix in shredded mozzarella.

Beat eggs with the cream, add salt & pepper, combine with base mixture. Mix gently to cover all the ingredients evenly.

Bake in a casserole dish covered on 400F for 30 min, and 5 min uncovered to develop golden crust on top.
