Apple Pancakes




Ingredients:

White flour
Apples juice
Non fat cream
Non Fat vanilla yogurt
Egg
Sugar
Honey
Apples
Cinnamon
Confectioners sugar
Salt
Baking soda
Vegetable oil for frying

Directions:
Apples:
Peel and cut up green apples in small cubes, combine with honey and cinnamon and place in a microwave oven to cook for a few minutes until soft.

Pancakes:
Beat egg with apple juice, cream, and yogurt and sugar. Add just enough flour to make the batter thick. Add salt and baking soda. Allow 10 minutes for the batter to set before frying.

Preheat vegetable oil in a thick bottomed pan. Fry pancakes on both sides, flipping them once the bubbles appear on the surface of the cake.

Serve warm with cinnamon apples sprinkled with confectioners sugar and cinnamon.
