Tilapia Crumble




Ingredients:
Tilapia
Lemon
Red bell pepper
Yellow bell pepper
Tomato
Onion
Portabella caps
Croutons
Salt, cumin, paprika, cajun spice mix, basil, oregano
 
Directions:
Caramelize finely chopped onion with red and yellow peppers, add chopped up tomato and portabella, salt and spices, reduce heat and sauté for a few minutes.
Crush (garlic & butter variety) croutons into fine crumbs.
Preheat the oven to 400°F. Put thinly sliced peeled lemon on the bottom of a shallow ovenproof dish, place tilapia (cut into medium size chunk) on top in a single layer.
Pour vegetable mixture over the fish. Spoon the crouton crumbs over the mixture evenly, sprinkle with basil and oregano.
Bake for 30 minutes uncovered.
