Pancakes with prickly pear plum garnish.
1 egg
½ cup of non fat cream
2 table spoon of vegetable oil
2 table spoon of non fat vanilla yogurt
¼ cup of sugar
¼ cup of water
Flour to make thick batter
1 tea spoon of kosher salt
1/8 tea spoon of baking soda
1 table spoon of vinegar
1 prickly pear
1 small plum
Honey
Beat egg with cream and vegetable oil (if regular, not non fat, cream is used, the oil can be excluded from the list of ingredients). Gradually add sugar, vanilla yogurt and water, mix until sugar is fully dissolved.
Add salt, and flour little by little, mixing well until batter is thick (yogurt consistency).
Mix baking soda with vinegar and add to the batter.
Fry pancakes on medium heat in vegetable oil until golden brown.
Clean and mash prickly pear with a plum. Add honey to the mixture.
