Roasted Chicken dinner



Ingredients:
Whole Chicken
Garlic
Onion
Carrots
Celery
Dried Cranberry
Salt
Dried Garlic
Pepper
Cajun Spice
Cumin
Paprika
Dried Parsley
Spaghetti Squash
Olive oil

Directions:
Roasted Chicken:
'Butterfly' the Chicken
Rub with salt, spices
Cut up all vegetables in large chunks, place on the bottom of large roasting pan
Put chicken on top of vegetables
Cover, and roast for 1 hour undisturbed, uncover for 15 minutes.
Garnish:
Cut spaghetti squash in half, scoop out seeds, save and roast them with salt & dry garlic
Brush squash halves with olive oil, sprinkle with kosher salt and dried cranberries
Wrap in foil, and roast until al dente
Scoop ‘n’ serve with roasted seeds.
