Rissoles with vegetable medley - One pot dish
Ingredients:
For the Rissoles
1/3 lb of ground chicken
1/3 lb of ground turkey
1 egg
½ cup of non fat cream
3 table spoons of oat bran
Salt, pepper, smoked paprika, cumin
blue and white onion
garlic
red bell pepper
yellow zucchini
portabella caps
garlic
red bell pepper

Beat cream with an egg, salt, and spices. Add oat bran, mix and
combine the mixture with the ground meats. Mix well, and allow to set for about fifteen
minutes, then form medium size rissoles.
Heat up a thick bottomed frying pan, and fry rissoles on
both sides to obtain a medium brown crust.
Remove rissoles from the pan and place onion and garlic into
the meat juices, fry until the beginning stages of caramelization (light brown
color), then add bell peppers, zucchini, portabella caps, reduce heat, add a
pinch of salt and continue to cook for a few minutes until veggies get slightly
soften.
Return rissoles into the pan and sauté together with the veggies in their natural juices for a few more minutes.
